DOM Postpartum Doula, Amanda, shares one of her favorite recipes!

After a long day sometimes reaching for an easy and quick recipe for dinner is exactly what I need. I almost always have all of the ingredients already at home for this recipe so I don't have to worry about going to the store for anything. I love a good Sloppy Joe but when no one else in the house likes them I hardly make it but it is something that always comes to mind when I am thinking for something quick and easy to make for dinner. I came across this recipe for an Asian Sloppy Joe and it is a hit!

1 bag of soy crumbles or 1 pound of meat of your choice

1 medium green pepper

1 tablespoon of OVOO

1 medium onion

2 tablespoons of soy sauce

1 inch of fresh ginger (you can use powder if you do not have fresh)

1/2 cup of barbecue sauce

Start by sauteing your onion and peppers with your olive oil until your onions are a translucent color. Then add your soy crumbles or you can easily add a pound of your choice of meat. Cook that through then add your ginger, soy sauce and barbecue sauce. Cover and heat for 10 minutes.

Pair this with some french fries or a vegetable for quick and easy meal that the whole family will enjoy!
