Happy first day of summer! It's already a muggy day here so this weeks Meal Monday post will be a light and easy dish! 

Summer Corn and Tomato Pasta

What you need

  • One pound of bow-tie pasta
  • Two Tablespoons of olive oil
  • Two garlic gloves, minced
  • One can of drained corn or three ears of fresh corn with the kernels cut off
  • Two tablespoons of butter
  • 1/4 cup of torn basil leaves


Cook your pasta until al dente and drain. Put olive oil, garlic and tomatoes in a sauce pan, cook until tomatoes are soft. Add in your corn and cook till heated through and slightly golden. Combine pasta, butter, veggies and basil.
