It's hot!!! And if you are anything like me, your appetite gets tricky during the summer. Throw in pregnancy cravings/aversions or postpartum hormones, and eating isn't as simple as it used to be! So hungry all the time, but everything sounds gross!! When I get in these eating slumps I tend to crave fresh healthy food! Who wants to sit in a hot kitchen, eating hot food in mid July? Not this girl! Today we have a Grilled Chicken Salad! Easy!

Grilled Chicken Salad

Ingredients

  • 1 lbs of chicken
  • 1 head of romaine lettuce
  • half a cucumber
  • one tomato
  • Cheese- Sharp Cheddar or feta are my faves! 
  • Handful of dried cranberries

Method

Cut your chicken into thin strips and grill. I use butter along with salt and pepper. Bonus if your hubby grills it up outside! Wash your romaine, dry and chop up. Dice your tomato and cucumbers. Add it all to a large bowl, sprinkle cheese and cranberries and top with your favorite dressing! This will serve 2-4 people.
