I REALLY dislike doing the dishes. It is probably my least favorite chore, so anything I can do to cut down the time spent scrubbing pots and pans is a plus. That is one of the reasons I like this one pot zucchini mushroom pasta. It is quick and easy and made all in one pot so there is less time spent on dishes once dinner is done........or tomorrow if you are like me and put off doing them.

1 pound spaghetti
1 pound cremini mushrooms, sliced thin
2/3 cup peas
2 zucchini, sliced thin and quartered
2 sprigs thyme
2 cloves garlic, thinly sliced
Salt and pepper, to taste
1/3 cup grated Parmesan cheese
1/4 cup heavy cream (or milk can be substituted)

In a large pot heat all the ingredients EXCEPT the heavy cream and Parmesan cheese in 4 1/2 cups of water over medium heat.

Bring the water to a boil. Then reduce the heat, and let it simmer until the pasta is fully cooked and most of the water is gone (this usually takes 8-10 minutes).

Mix in the cream and the Parmesan cheese and it's ready to serve.
