There is nothing quite like a meal cooked by grandma. Growing up one of my grandma's go to dinners was chicken paprikash. To this daythere is something so comforting about it. While this recipe is not quite the same as hers (she does it all by feel and memory, not a written recipe), and I don't think anyone could ever make it quite as delicious as hers, it is a great dish for a winter night.
1 lb of chicken (can be either legs or breast)
1 onion finely chopped
2 cloves minced garlic
1 tsp paprika
1/4 tsp coriander
2 Tbs tomato paste
1 cup chicken broth
1/4 cupsour cream
1/2 cup of spinach(optional)
Season chicken with salt and pepper then brown in a large pan with olive oil
Remove the chicken from the pan, then add the onion and garlic to the pan and cook until softened
Add tomato paste, coriander, paprika, salt andpepper to the pan. Cook for about 1 minute, then add the chicken broth and bring to a simmer over medium-lowheat
Add the chicken back to the pan and cook in the sauce for about 15 min.
Add sour cream and spinach (if desired) to thepan and cook until the spinach is wilted.
